Ingredients:
- 500 g ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon pepper
- 2 teaspoons salt
- ⅓ Cup bread crumbs
- 3 cloves garlic, minced
- ½ onion, diced
- 10g fresh parsley, loosely packed, chopped
- 1 egg
- 1 tablespoon tomato sauce (Aussie's version of ketchup)
- 1 tablespoon mustard
- 1 teaspoon Worcestershire sauce
- 1 tablespoon honey
- 4 medium onions
- 230 g cheddar cheese, cubed
- 16 strips bacon
- BBQ sauce, for glazing

Steps:
- At your campsite, prepare your campfire or portable grill for cooking.
- In a mixing bowl, combine ground beef, garlic powder, onion powder, pepper, salt, bread crumbs, minced garlic, diced onion, parsley, egg, tomato sauce, mustard, Worcestershire sauce, and honey. Mix well.
- Cut the onions in half, vertically. Remove the stem and root from each piece. Gently separate the layers of each onion; these will be your "shells."
- Take golf ball-sized portions of the meat mixture, press a small cube of cheddar in the centre, and then shape it around the cheese.
- Wrap each meatball with 2 onion layers, followed by 2 strips of bacon. Use toothpicks to secure if necessary.
- Generously brush each meatball bundle with BBQ sauce.
- If using a campfire, place the meatballs on a grill grate over the fire, turning occasionally and brushing with additional BBQ sauce. Cook until the bacon is crispy and the meatballs are cooked through about 45 minutes. If using a portable grill, follow the same steps.
- Once cooked, let them cool for a few minutes and serve.
Tips:
- If preparing at home, you can pre-mix the meatball mixture and store in a cooler to save time at the campsite.
- Remember to turn the meatballs occasionally for even cooking.
- If you're looking for an extra kick, you can mix a bit of hot sauce into your BBQ glaze!
- Be cautious of any flame flare-ups when the bacon fat drips; adjust the meatballs' position as needed.
- Use medium to low flames for cooking. If the fire is too hot, the bacon can burn before the meatball is fully cooked inside.
- Soaking toothpicks in water prevents them from catching fire when placed on the grill.
