Aussie Outback Lamb Skewers

Ingredients:

  • 500 grams of lamb shoulder, cut into chunks
  • 2 tablespoons of macadamia oil
  • 1 tablespoon of ground bush tomato
  • 1 teaspoon of dried wattleseed
  • 1 teaspoon of lemon myrtle powder
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden)

For the Bush Tomato Chutney:

  • 200 grams of bush tomatoes
  • 1 red onion, finely chopped
  • 2 cloves of garlic, minced
  • 100 ml of apple cider vinegar
  • 50 grams of raw sugar
  • 1 teaspoon of ground ginger
  • Salt to taste

Preparation Time & Cooking Time:

  • Prep Time: 30 minutes (plus marinating time)
  • Cook Time: 10 minutes

Steps:

  1. Marinate the Lamb: Combine lamb chunks with macadamia oil, ground bush tomato, wattleseed, lemon myrtle, salt, and pepper. Cover and marinate in the fridge for at least 2 hours, or overnight for deeper flavor.
  2. Prepare the Chutney: In a saucepan, combine bush tomatoes, red onion, garlic, apple cider vinegar, sugar, ginger, and salt. Simmer over low heat until thickened. Allow to cool.
  3. Skewer the Lamb: Thread the marinated lamb onto skewers, packing them tightly.
  4. Grill Over Open Flame: Grill the skewers over a prepared fire or barbecue, turning frequently, until the lamb is charred on the outside and cooked to your preference.
  5. Serve with Chutney: Serve the lamb skewers hot, accompanied by the bush tomato chutney.
