Aussie Campfire Breakfast Scrambler

 

G'day campers! There's no better way to greet the Australian sunrise than with a hearty scrambler that's bursting with iconic Aussie flavours. Combining traditional breakfast staples with a touch of the Outback, this dish will fuel your adventures and make you feel right at home among the gum trees and kangaroos.

Ingredients

  • 8  hashbrowns, thawed
  • 2 cups Australian-style Christmas ham, diced
  • 6 whole eggs
  • 1/4 cup milk
  • 2 cups cheddar cheese, shredded (try using an Aussie vintage cheddar)
  • 1 cup green onion (or spring onions, as they're often called Down Under), diced
  • Salt & pepper, to taste
  • 1/2 cup tomatoes, diced

Instructions

  1. At home, prep your ingredients. Combine the eggs, milk, cheddar cheese, spring onions, and bush tomatoes in a sealable container. Keep chilled until ready to use.
  2. At the campsite, spray a cast iron skillet or a suitable campfire cooking pan with cooking spray. Layer in the hashbrowns and ham.
  3. Pour the egg mixture you prepped at home over the hashbrowns and ham in the skillet.
  4. Season with salt and pepper.
  5. Place the skillet over the campfire on a grate or use a tripod. If you have a lid for the skillet, place it on top. If not, use aluminium foil to cover it.
  6. Cook over medium campfire heat for about 30 minutes. Check periodically, giving it a stir to ensure even cooking.
  7. Once the hashbrowns look crispy and are well-coated with the scrambled eggs, remove them from the fire and let them sit for a few minutes.

Tips

  • If you can't find bush tomatoes, regular cherry tomatoes can be substituted.
  • Always be mindful of the campfire heat; you don't want it too hot, or the bottom might burn before the top is cooked.

For an added touch of Australian flavour, consider sprinkling in some crushed macadamia nuts or using an Australian hot sauce for an extra kick after serving!
