Instructions:

  1. Make the Biscuit Dough: In a large bowl, combine flour, baking powder, and salt. Rub in the cold butter using your fingertips until the mixture resembles fine breadcrumbs. Gradually add milk, mixing until you have a soft dough. Roll the dough into small balls about the size of a walnut.
  2. Spread out 4-5 sheets of tin foil, each about 12-15 inches long. Give them a light spray with cooking oil.
  3. Coat the Biscuits: Place the sugars, cinnamon, and cappuccino mix in a zip-top bag. Add in the dough balls. Seal and shake until each piece is well-coated.
  4. Assemble: Arrange the coated dough balls on the prepared foil. Sprinkle some of the leftover coating mix over them and dot with small cubes of butter.
  5. Campfire Cooking: Fold the foil into packets and seal tightly. Place on a grate over smouldering campfire coals, cooking for 20-25 minutes. Turn occasionally to ensure even cooking.
  6. Prepare the Glaze: While your monkey bread bakes, whisk together the icing sugar, cappuccino mix, and milk in a bowl until smooth.
  7. Serve: Open the foil packs carefully (watch for steam), drizzle with the glaze, and enjoy!
