Outback Vegemite & Cheese Damper

 

Venture into the heart of the Australian outback with this classic camping recipe, given a delicious twist with the addition of Vegemite and cheese. Cooking this damper around a campfire will not only fill the air with the mouthwatering aroma of baking bread but also provide a hearty, comforting snack that's intrinsically Australian.

Ingredients:

  • 450 grams (3 cups) self-rising flour, plus extra for dusting
  • 1 teaspoon salt
  • 80 grams (⅓ cup) butter, chilled and cubed
  • 2 tablespoons Vegemite
  • 240 ml (1 cup) water
  • 120 grams (1 cup) grated Australian cheddar cheese
  • A handful of fresh rosemary leaves (optional)

Steps:

  1. Prepare the Dough: In a large mixing bowl, sift together the self-rising flour and salt. Rub the butter into the flour using your fingertips until the mixture resembles fine breadcrumbs. Stir in the Vegemite and most of the grated cheese (save some for topping), then gradually add water to form a soft dough.
  2. Knead and Shape: Turn the dough out onto a lightly floured surface and knead gently until smooth. Shape the dough into a round loaf, pressing the remaining cheese and optional rosemary leaves on top.
  3. Campfire Cooking: Prepare your campfire and let it burn down to a bed of hot coals. Place the damper on a piece of aluminum foil and cover with another piece, sealing the edges to create a makeshift "oven". Bury the foil-wrapped damper in the hot coals and bake for about 30 minutes, or until the damper sounds hollow when tapped.
  4. Serving: Carefully remove the damper from the coals (it will be hot!) and unwrap. Let it cool slightly before breaking into pieces. Enjoy warm, slathered with more Vegemite, butter, or your choice of spread.

Tips:

  • No Self-Rising Flour?: Make your own by adding 2 teaspoons of baking powder for each 150 grams (1 cup) of all-purpose flour.
  • Water Amount: Adjust the water as needed; the dough should be soft but not sticky.
  • Check for Doneness: If unsure whether the damper is fully cooked, use a metal skewer or small knife to check the center. It should come out clean.
