Outback BBQ Chicken Bundles

 

Grab your swag and set up camp under the vast Australian sky. As the sun sets, let the scent of this hearty BBQ chicken remind you of the bustling streets of Sydney, combined with the wild beauty of the Outback. These easy-to-make foil packs bring the best of both worlds straight to your campfire.

Ingredients:

  • 4 boneless skinless chicken breasts, cut in 1-inch pieces
  • 2 cups smoky Aussie BBQ sauce
  • 2 cups drained pineapple tidbits
  • 1 red capsicum (bell pepper), diced
  • 1 small red onion, diced

Instructions:

  1. If using a campfire, prepare your coals. If using a portable camp grill, set it up and preheat to medium heat.
  2. Take 4 large sheets of heavy-duty foil or double-up standard foil. Lay them flat on a surface.
  3. In a medium mixing bowl, combine the chicken pieces and BBQ sauce, ensuring each piece is generously coated.
  4. Evenly distribute the chicken pieces onto the centre of each foil sheet.
  5. Sprinkle the pineapple tidbits, diced capsicum, and red onion over the chicken.
  6. Fold the foil over the chicken and veggies, sealing tightly while leaving some room for steam to circulate. Ensure there's no chance of juices escaping.
  7. Place the foil bundles directly onto the campfire coals or onto the grill grate. If cooking over coals, let them cook for about 20 minutes, turning halfway. If grilling, cook for 10 minutes, then flip and cook for an additional 10-15 minutes.
  8. Ensure chicken is fully cooked (at least 165°F or 74°C) before serving. Be careful when opening the foil packs as steam will escape.

  • For extra flavour, consider marinating the chicken in the BBQ sauce for a few hours before cooking.
